Kheer is one of the most loved & favorite dessert in India. In every occasion or celebration peoples loves to eat. We usually make rice kheer, sabudana kheer, Rava kheer but sweet potato kheer we make in some particular season only. Sweet potato comes at end of winter near mahashivratri. On mahashivratri, people in various indian regions prepare different dishes or recipes using sweet potatoes. Sweet potato kheer is very delicious and we also use it in fasting also. It provides a lot of energy during fasting. We make it with raw or boiled sweet potato. So let’s see how to make very easy & delicious sweet potato kheer.
Ingredient:
– Raw Sweet Potatoes 6 Pieces (Shakarkandi)
– Ghee 1 Tbsp
– Dry Fruits ½ Cup (Sukha Mewa)
– Milk 500 ML
– Saffron (Kesar)
– Sugar ⅓ Cup (Shakkar/Cheeni)
– Cardamom Powder 1 Tsp (Elaichi Powder)
Step By Step Instructions:
1. Preparation:
– Begin by washing the sweet potato thoroughly under running water so that all the dirt is removed.
– Once washed, peel the sweet potato and keep it in the water. If we kept outside it becomes blackish.
2. Grating:
– Once all you peeled all the sweet potato, take a grater. Grate all the raw sweet potato and keep it in a bowl.
– If you don’t want to grate it, boil all the sweet potato and mash them for further use.
3. Roasting:
– Heat skillet or pan over medium heat, add 1 tablespoon ghee in it. Add grated sweet potato and roast until it becomes soft.
– In this stage add chopped dry fruits and roast it with sweet potato.
4. Mixing All Ingredients:
– After roasting sweet potatos and dry fruits add 500 ml milk to it.
– Take 5 to 6 strains of saffron in 2 tablespoon milk and add it to the boiling milk and sweet potato. Stir continuously until it becomes thicken in texture.
– Add ⅓ cup sugar for sweetness and stir until it dissolves. Add ½ teaspoon cardamom powder to enhance the taste of the sweet potato kheer.
5. Serving:
– Sweet potato kheer can be served as a sweet alongside with various occasional meals.
– It can also be used as a food in various fast like Ekadashi, Mahashivratri, Navaratri, or in any other fast.
