Pahadi aloo is also called as Aloo Ke Gutke. This aloo ke Gutke is most famous and tradditional dish of pahadi region of uttarakhand state. While traveling to the hills of uttarakhand, you will be welcomed with this delicious dish in every home. This dish is nearly similer to jeera aloo. but, It is little bit spicy than normal jeera aloo. You can eat this with Puri or rice and it taste very delicious. The preparation of this dish is very traditional, but we are showing how to make it easily at home.

Pahadi Aloo / Aloo Ke Gutke

Ingredients:

–  Coriander Seeds 1 Tablespoon (Dhaniya)
–  Cumin ½ Tablespoon (Jeera)
– ⁠ Ginger 1 Inch (Adrak)
– ⁠ Garlic 4-5 Cloves (Lehsoon)
– ⁠ Green Chilli 3 Medium (Hari Mirch)
– ⁠ Red Chilli Powder 1 Tablespoon (Lal Mirch Powder)
– ⁠ Garam Masala ½ Tablespoon
– ⁠ Water as Required
– ⁠ Mustard Oil 2 Tablespoon (Sarso Tel)
– ⁠ Mustard Seeds 1 Teaspoon (Sarso)
– ⁠ Cumin Seeds 1 Teaspoon (Jeera)
– ⁠ Asafoetida ½ Teaspoon (Hing)
– ⁠ Dry Red Chilli 4-5 (Sukhi Lal Mirch)
– ⁠ Salt To Taste (Namak)
– ⁠ Boiled Potato 3-4 Medium (Uble Aloo)
– ⁠ Lemon Juice (Nimbu Ras)
– ⁠ Fresh Coriander Leaves (Dhania Patta)

Step By Step Instructions:

1. Boiling Potatoes
– Wash 3 to 4 medium size potatoes with water and boil it for further use.
– After the potatoes boils, remove the peels, cut them into small pieces, and keep them a bowl.

2. Preparing Paste
– Take Mortar & pestel ( Khal Batta / Imam Dasta ), add 1 tablespoon coriander seeds, ½ tablespoon cumin Seeds, 1 Inch ginger piece, 4 to 5 garlic cloves and 3 medium green chillies in it. Crush and grind all ingredients roughly.
– Add 1 tablespoon red chilli Powder, ½ tablespoon garam masala and dash of water and mix all together to make a paste.
– If you don’t Have mortar and pestle, take mixture pot and add all the ingredients given above and make a paste.

3. Tadka
– Take 2 tablespoon mustard oil in a pan and heat it.
– After oil gets heated, add 1 teaspoon mustard seeds. If mustard seeds crackled, add 1 teaspoon Cumin Seeds, ½ teaspoon Asafoetida, 4 to 5 red chillies in it and saute for a minute.

4. Mixing together
– Add prepared paste, Salt to taste and mix it together.
– Add boiled potatoes in the pan and mix until potatoes get coated with all masala.
– At last add some lemon juice and chopped coriander to enhance the taste. Serve hot with chapati or rice and enjoy the aloo ke Gutke.

5. Serving
– Aloo ke gutke can be served alongside with puri, chapati, rice or dosa.
